Schezwan Chicken Recipe – Spicy Indo-Chinese Favorite



Schezwan Chicken is a fiery, flavorful Indo-Chinese dish that has won the hearts of spice lovers. Known for its bold flavors, vibrant red color, and signature Schezwan sauce, this dish is a perfect combination of tender chicken pieces tossed in a hot, tangy, and garlicky sauce. It can be served as a starter or as a main course with fried rice or noodles.


Ingredients:

For the Chicken:**

  • 500g boneless chicken (cut into bite-sized pieces)

  • 2 tablespoons cornflour

  • 2 tablespoons all-purpose flour (maida)

  • 1 teaspoon soy sauce

  • 1 teaspoon ginger-garlic paste

  • Salt to taste

  • Oil for frying

For the Sauce:**

  • 3 tablespoons Schezwan sauce (store-bought or homemade)

  • 1 tablespoon chopped garlic

  • 1 tablespoon chopped ginger

  • 1 medium onion (sliced)

  • 1 medium capsicum (diced)

  • 2–3 green chilies (slit)

  • 1 tablespoon soy sauce

  • 1 tablespoon tomato ketchup

  • 1 teaspoon vinegar

  • 1 teaspoon sugar

  • ½ cup chicken stock or water

  • 2 tablespoons oil

  • Spring onions for garnish


Preparation Steps:

Step 1: Marinate and Fry the Chicken

  1. In a bowl, combine chicken cubes with cornflour, all-purpose flour, soy sauce, ginger-garlic paste, and salt.

  2. Deep fry or shallow fry until crispy golden brown. Set aside.

Step 2: Prepare the Schezwan Sauce Base

  1. Heat 2 tablespoons oil in a wok on high flame.

  2. Add chopped garlic, ginger, and green chilies. Sauté until fragrant.

  3. Add onions and capsicum, stir-fry for 2–3 minutes.

  4. Mix in Schezwan sauce, soy sauce, ketchup, vinegar, and sugar. Stir well.

Step 3: Combine and Finish

  1. Add fried chicken pieces and toss in the sauce until fully coated.

  2. Pour in chicken stock or water to make a semi-thick gravy (optional for dry version, skip this step).

  3. Cook for another 2–3 minutes and garnish with spring onions.


Serving Suggestions:

Serve Schezwan Chicken hot with Hakka noodles, fried rice, or as a spicy appetizer for parties.


Tips for the Perfect Schezwan Chicken:

  • Use homemade Schezwan sauce for authentic taste and heat.

  • Adjust spice levels by adding more or less Schezwan sauce.

  • Ensure the wok is on high flame for a smoky, restaurant-style flavor.
