Chicken Manchurian Recipe – A Perfect Indo-Chinese Delight



Chicken Manchurian is one of the most popular Indo-Chinese dishes loved across India and beyond. With crispy chicken pieces tossed in a tangy, spicy, and flavorful sauce, this dish perfectly combines Chinese cooking techniques with Indian spices. Whether you serve it as an appetizer or pair it with fried rice or noodles, Chicken Manchurian is always a crowd-pleaser.


Ingredients:

For the Chicken:

  • 500g boneless chicken (cut into small cubes)

  • 2 tablespoons cornflour

  • 2 tablespoons all-purpose flour (maida)

  • 1 teaspoon soy sauce

  • 1 teaspoon ginger-garlic paste

  • Salt to taste

  • Oil for deep frying

For the Sauce:

  • 1 tablespoon chopped garlic

  • 1 tablespoon chopped ginger

  • 1 medium onion (finely chopped)

  • 1 medium capsicum/bell pepper (diced)

  • 2–3 green chilies (slit)

  • 2 tablespoons soy sauce

  • 1 tablespoon tomato ketchup

  • 1 tablespoon chili sauce

  • 1 teaspoon vinegar

  • 1 teaspoon sugar

  • 1 cup chicken stock or water

  • 1 tablespoon cornflour mixed with 2 tablespoons water (slurry)

  • Salt as needed

  • 2 tablespoons oil


Preparation Steps:

Step 1: Marinate and Fry the Chicken

  1. In a bowl, mix chicken cubes with cornflour, all-purpose flour, soy sauce, ginger-garlic paste, and salt.

  2. Heat oil in a pan and deep-fry the marinated chicken pieces until golden and crispy. Set aside.

Step 2: Prepare the Sauce

  1. Heat 2 tablespoons of oil in a wok.

  2. Add chopped garlic, ginger, and green chilies. Sauté until aromatic.

  3. Add onions and capsicum, stir-fry on high heat for 2–3 minutes.

  4. Stir in soy sauce, chili sauce, tomato ketchup, vinegar, and sugar. Mix well.

  5. Pour in chicken stock or water, bring to a boil, then add the cornflour slurry to thicken the sauce.

Step 3: Combine Chicken with Sauce

  1. Add fried chicken pieces to the sauce and toss until well-coated.

  2. Cook for another 2–3 minutes on medium heat.


Serving Suggestions:

Serve Chicken Manchurian hot as a starter or pair it with Hakka noodles, fried rice, or steamed rice for a wholesome meal. Garnish with spring onions for extra flavor.

  • Always fry chicken on medium heat for crispiness.

  • Adjust spice levels by increasing or decreasing chili sauce.

  • For a healthier version, pan-fry or air-fry the chicken instead of deep-frying.
